Santa Monica Proper Hotel offers a luxury lifestyle experience in the heart of Santa Monica, featuring award-winning dining concepts including Calabra, our rooftop Mediterranean restaurant. Our culinary program celebrates California's abundance through coastal Mediterranean cuisine, highlighting seasonal ingredients from local farmers' markets, sustainably-sourced seafood, and humanely-raised meats.
Position Summary
We are seeking a skilled and versatile Chef de Tournant to join our culinary team. In this pivotal role, you will rotate through various kitchen stations, demonstrating expertise in multiple cooking techniques while supporting the Executive Chef and Sous Chefs in delivering exceptional cuisine that aligns with our commitment to quality and sustainability.
The Chef Tournant is a dynamic culinary leader responsible for supporting and overseeing food operations across all three culinary outlets: Calabra, Palma, and the P1 Commissary Kitchen. This position ensures consistent execution of culinary standards, quality, and service, while actively contributing to menu development, food preparation, team training, and day-to-day operations. The Chef Tournant plays a key role in upholding the hotel’s wellness-centered culinary identity and maintaining operational excellence in a luxury design hotel environment
Primary Responsibilities
Culinary Operations
• Maintains quality, consistency, and timely execution of all food offerings across Calabra, Palma, and the commissary kitchen.
• Leads by example through hands-on cooking, plating, and directing service execution during key meal periods.
• Oversees daily production schedules and shift operations, ensuring adherence to all food safety and sanitation protocols.
• Supports and enforces compliance with brand standards, health department regulations, and Forbes-level service expectations.
Menu Execution & Production Oversight
• Assists in developing seasonal menus, specials, and wellness-aligned offerings in collaboration with the Executive Chef.
• Communicates production needs effectively to ensure all outlets are adequately prepared.
• Reviews and manages production from the commissary kitchen to ensure consistent quality and timely distribution to outlets.
• Evaluates and approves product quality, presentation, and portioning standards across all stations.
Team Leadership & Training
• Supervises line cooks, prep cooks, and kitchen stewards across all venues as needed.
• Provides active coaching and mentorship to culinary team members to support skill development and cross-training.
• Supports hiring, onboarding, and continued performance evaluation efforts.
• Cultivates a culture of professionalism, accountability, and teamwork.
Operational & Financial Accountability
• Maintains par levels, monitors food waste, and supports cost control initiatives to meet food cost targets.
• Assists with inventory management and purchasing in collaboration with sous chefs and purchasing manager.
• Collaborates with the Executive Chef and F&B management to execute successful service while meeting labor and cost goals.
Guest Experience & Service Standards
• Interacts with guests during service to gather feedback and ensure satisfaction.
• Models guest-first hospitality and ensures all food is served according to quality, timing, and presentation standards.
• Upholds the hotel’s brand values of health, design, and experience-driven dining.
Requirements
• Minimum 3–5 years of culinary leadership experience in a high-end, multi-outlet environment.
• Strong understanding of modern, health-conscious, and seasonal cooking.
• Proven experience managing production kitchens and multiple service outlets.
• Excellent communication, organizational, and leadership skills.
• Culinary degree preferred; ServSafe certification required.
